Regarding your question Iranian sheep head which is called کله پاچه (kale pache) in Iran consists of a bowl of sheep head including the brain, tongue, and other muscle/meat in the head, which then is boiled to perfection.
This kind of dish is usually served as a breakfast option due to its nutritional value and amazing taste.
The brain has a fatty meat flavor while the tongue and the meat in the head has a more chewy flavor, The broth itself is consumed too which tastes amazing with a few lime drops and a pinch of salt.

About your question about Iranian sheep head. I have not had this specific cuisine before so I do not have an opinion on this dish specifically. The idea of eating any head from any animal is personally revolting but I am sure that other people, especially those from Iran, such as @Nirvan would have no problem eating this dish.
